Biscotti with Almonds
This biscotti recipe is a basic recipe that is easy to make and was given to me by my friend Claire. I have added roasted almonds to my version. This basic recipe can be made with add ins such as almonds, grated orange or lemon peel, chocolate chips, candied fruit and different extracts.
Ingredients:
3 Eggs
3/4 Cup of Canola or Vegetable Oil - not olive oil
3/4 Cup of Sugar
1 Teaspoon vanilla (or any other extract you like such as almond extract)
2 Cups of flour
3 Teaspoons baking powder
Roasted chopped Almonds (see below for method)
Instructions:
In a bowl combine flour and baking powder.
Beat eggs, oil, sugar and vanilla in a larger bowl.
Slowly mix or beat the flour mixture into the liquid mixture. If the dough is too sticky add a bit more flour. Mix in toasted almond pieces.
Form into four logs and put on a cookie sheet. Brush the tops of the logs with egg white to give the biscotti a shiny glaze.
Bake for 20 minutes in a 350 degree F oven.
Take the logs out and cool completely before slicing the logs on a diagonal to form cookies. A bread knife works best.
Lay the cookies flat on the baking sheet and then bake again for 5 minutes in a 350 degree F oven, then turn cookies over and bake for another 5 minutes.
Roasted almonds: Spread almonds on a baking sheet and roast for about 12 to 15 minutes in a 325 degree F oven. Chop the almonds in half or quarters. Let cool before adding to the biscotti cookie mixture.
