Buttermilk Belgian Waffles

Ingredients:

3 cups of all-purpose flour
2 teaspoons of baking powder
1 teaspoon baking soda
1/2 teaspoon of salt
5 tablespoons of sugar
3 cups of 1% milk or whichever you prefer (add one tablespoon of lemon juice or white vinegar per cup of milk--let the mixture stand for 10 minutes before using) This is a way of making buttermilk without having to buy buttermilk
1/4 cup of butter--equals 4 tablespoons (melted)
2 eggs separated
2 teaspoons of vanilla

Top with syrup or confectioner's sugar

Instructions:

Sift the dry ingredients together in a large bowl.

In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla.  Pour into dry mixture and combine.

In a medium bowl, beat egg whites with mixer until they form soft peaks.

Fold the fluffy egg whites into the batter.

Pour about 1/3 cup of batter for each waffle.

Cook until golden brown (according to your iron) or until steam stops coming out of sides of iron.

Wipe the waffle iron grids with vegetable oil before heating up the waffle iron.
